Garlic Crumbed Chicken Kiev

You will need:
- 2 chicken breasts, halved
- Salt and pepper
- 8 tbsp butter, softened
- 1 tbsp mixed dried herbs
- 4 tbsp Grumpy Gary's Gar-Lick dip
- Flour
- 2 eggs, beaten
- Bread crumbs
- Vegetable oil (for deep frying)
Method
- Flatten chicken halves, season with salt and pepper.
- Mix 8 tbsp softened butter with 1 tbsp herbs.
- Place 1 tbsp of this mixture on each chicken piece.
- Top with 1 tbsp Grumpy Gary's Gar-Lick dip.
- Fold and roll the chicken tightly, secure with toothpicks. (or roll in cling wrap and place in the fridge for 30 minutes)
- Dredge in flour, then dip in beaten eggs, and coat with bread crumbs.
- Preheat deep fryer to 175°C.
- Fry chicken rolls for 5-6 minutes until golden brown and fully cooked.
- Remove toothpicks before serving.
- Drain on paper towel, serve hot. Enjoy!
